If your recipe rotation hasn't been shaken up in a while, you might be on the lookout for some delicious new dishes that won't break the bank or take up too much of your time at the end of a long day. Try these quick and easy recipes to add variety to your family's nightly dinners and find new favorites that will keep them coming back for more.

Stacked and Stuffed Chicken Cutlets
Serves: 4

You will need:

8 thinly sliced chicken breast cutlets
4 slices low fat Provolone Cheese
2-3 cups of raw spinach, to taste
1/2 cup of jarred roasted red peppers, drained and chopped
salt
pepper
granulated garlic
2 tsp olive oil

Preheat your oven to 400 F. Heat 1 tsp of olive oil in a large nonstick skillet over medium-high. While the pan heats, season chicken cutlets on both sides with salt, pepper and granulated garlic to taste.

When the pan is hot, cook the cutlets 4 at a time. Cook for 2-3 minutes on each side, or until cooked through.

Spray a sheet pan with non-stick coating. Place four cutlets on the pan. Place a handful of spinach on each cutlet, followed by a piece of provolone cheese and 2 tbsp of chopped roasted red peppers. Top with another chicken cutlet. Bake for 5-7 minutes at 400 or until the cheese is melted.

Cool slightly and serve. Pairs well with a spinach salad and your favorite white wine.

Steak Bites with Roasted Sweet Potato and Zucchini Toss
Serves: 4

You will need:

2 lbs beef cubes, trimmed
2 large sweet potatoes
2 large zucchini
1 tbsp butter
olive oil
kosher salt
granulated garlic
pepper
paprika(optional)
chili powder(optional)

Heat oven to 425 F. Wash sweet potatoes and zucchini and peel sweet potatoes if desired. Chop sweet potatoes and zucchini into 1/2 inch sized cubes. Toss with 1-2 tbsp of olive oil and sprinkle with salt, garlic, pepper, paprika and chili powder to taste. Toss and spread evenly on a sheet tray. Roast for 20-30 minutes, depending on your preference, flipping at the 15-minute mark.

For the steak bites, season the meat with salt, pepper, and garlic and heat about 2 tbsp of butter in a cast iron skillet over medium-high heat. While it heats up, turn on the exhaust fan to avoid a smoky kitchen. When the butterfat has turned a deep brown, add a single layer the meat to the pan, waiting about one minute before you move it. Flip the cubes and allow them to sear for about another 45 seconds on the opposite side, and then pull them quickly from the pan onto a serving plate. Depending on the size of the pan, you may need to repeat this process a few times. When all steak bites are finished cooking, serve with a roasted veggie toss.

Turkey Apple-Pear Salad
Serves: 4

You will need:

1/2 lb nice deli turkey
1 box spring mix
1 apple
1 pear
1/2 cup shaved Parmesan cheese
1/2 cup candied walnuts
Your favorite vinaigrette(champagne is a great pick)


Begin by chopping the deli turkey into bite-sized pieces. Slice the apple and pear into thin wedges, peeling first if desired and remove cores and seeds. Place spring mix into a large bowl. Top with turkey, sliced apple, sliced pear, Parmesan cheese, and candied walnuts and toss with salad tongs. Serve with your favorite vinaigrette on the side.

Easy Tomato Soup
Serves: 4

You will need:

olive oil
3 garlic cloves, pressed
1 32 oz can crushed tomatoes
1/2 cup light cream
1/2 chicken stock
1/4 cup finely chopped basil
Parmesan cheese and croutons for serving


In a saucepan, heat 1 tbsp of olive oil over medium heat and cook pressed garlic until soft and fragrant. Add crushed tomatoes, light cream and chicken stock and whisk. Bring to a simmer and add chopped basil. Cook 10-15 more minutes and serve topped with croutons and Parmesan cheese.
